Why Char Matters
When the inside of an oak barrel is exposed to flame, the heat transforms the wood. During aging, the liquid moves in and out of the oak as temperatures change, pulling out incredible flavors and aromas.
For whiskey, bourbon and other spirits, this charring process is what gives them their distinctive character, color and smooth finish. It’s the same process used in full-size bourbon barrels — now you can enjoy it at home with your own Caribbean Gold barrel.

While bourbon must be aged in new, charred oak barrels to meet U.S. standards, these same barrels can later be used to age and enhance a remarkable range of spirits, wines, cocktails, sauces and culinary creations. For solid ingredients: foods containing solid ingredients — peppers, fruit, herbs or spices — do best in a barrel with a larger opening.
Important Aging Guidance
We advise against aging plain juice, tea, coffee or other low-alcohol, water-based liquids in a traditional small barrel, because they can develop mold. Barrel-aged cocktails should not contain excessive juice, dairy, eggs or sugary, low-alcohol ingredients.
Always taste your creation frequently. Small oak barrels impart oak flavor much faster than traditional full-size barrels, giving you the freedom to stop the aging process the moment your preferred flavor has been achieved.
